Ingredients

  • Soaked and peeled gode waal
  • Fresh grated coconut
  • Green chillies
  • Ginger
  • Garlic
  • Mustard seeds
  • Cinnamon
  • Green cardamom
  • Cumin
  • Coriander seeds
  • Black pepper
  • Curry leaves
  • Onion
  • Kokam
  • Salt
  • Turmeric
  • Fresh coriander
  • Ghee
  • Oil

Instructions

Dry roast cumin, coriander seeds and black pepper in a pan and set aside.

In the same pan, heat ghee and add garlic, onion, green chillies and ginger. Saute till golden brown.

Add fresh coriander and take off the heat. Transfer the mixture to a blender.

Add the dry roasted spices and fresh grated coconut along with a couple of ice cubes and grind to a fine paste. Set aside.

In a wok, heat some oil. Add cinnamon, cardamom, mustard seeds, curry leaves and green chilli.

Add chopped onion and saute till golden, then add kokam.

Add the soaked gode waal, salt and turmeric and mix well.

Add the prepared masala paste along with enough hot water to completely submerge the waal.

Cover and cook on low heat for around 15 to 20 minutes, stirring occasionally to prevent burning.

Once the cooking liquid has completely reduced and the subzi is cooked, take off the heat and garnish with fresh chopped coriander. Serve with chapati or bhakri.
