Marble Cake
Ingredients
- ●1 1/4 cup flour
- ●1 tsp baking powder
- ●1/2 tsp baking soda
- ●1/2 cup butter
- ●3 tbsp caster sugar
- ●1/2 cup vegan condensed milk
- ●1 tsp vanilla extract
- ●1/2 cup lactose free milk
- ●2 tbsp cocoa powder
- ●2 tbsp warm water
- ●1/2 cup dark chocolate
- ●1 tsp sunflower oil
Instructions
Cream together the sugar and butter until pale.
Add the lactose free milk, condensed milk, and vanilla extract, then whisk to combine, the batter may look split or curdled at this stage, which is fine.
Sift in the flour, baking powder, and baking soda, then gently fold until just combined.
Divide the batter evenly into two portions.
Mix together the cocoa powder and warm water until there are no lumps, then stir this mixture into one half of the batter.
Grease and flour a loaf tin, then alternate spoonfuls of the chocolate and vanilla batters in multiple layers.
Use a knife to swirl a figure-of-eight pattern through the batter once or twice to create the marble effect.
Bake in a preheated oven at 180°C for 50 minutes.
Allow the cake to cool in the tin for 20–25 minutes, then turn out onto a wire rack.
Leave to cool for a further hour.
Melt the dark chocolate in a double boiler, add the sunflower oil, and stir until smooth and glossy.
Pour the chocolate glaze over the cooled cake and serve.
