Single Serve Chocolate Cake

Ingredients
- ●1.5 tbsp hot water
- ●0.5 tsp instant coffee
- ●1.5 tbsp cocoa powder
- ●3 tbsp sugar
- ●1.5 tbsp oil
- ●2 tbsp curd
- ●3 tbsp AP flour
- ●1/8 tsp baking powder
- ●1/8 tsp baking soda
Instructions
Dissolve the instant coffee in the hot water and set aside.
Add the cocoa powder and sugar to the coffee mixture and stir to combine.
Mix in the oil and curd until smooth.
Sift in the AP flour, baking powder, and baking soda, then fold gently until just combined.
Pour the batter into a greased single-serve mug or ramekin.
Microwave on high for 60 to 90 seconds, or bake at 180°C for 12 to 15 minutes, until the cake is set and a skewer comes out clean.
Allow to cool slightly before serving.
